Let's throw the windows open and let the fresh air in!
I've done this very thing today, as it's sunny and gorgeous out there. But, I also wanted to give a boost to the freshness that's sweeping through the house, with a bit of lemon peel, some rosemary, and a splash of vanilla.
This idea, I found a couple years ago, and I've used it ever since. I've used fresh lemons when I have them (the ends of one are more than enough), but also, instead of tossing spent lemons who've given their juice to tea and their zest to scones, I've taken to freezing them, cut into chunks, ready to pop into a simmering pot; the end of one thing becoming the beginning of another.
The scent is somehow bright, yet mellow, with a quiet note of sweetness. It's the smell of all that is happy and blooming and yellow.
On the back of the stove in my tiniest pot it simmers over a blue smidgeon of flame. And when the escaping vapors have it nearly drained, a splash more water lengthens the goodness.
