So, you don’t bake them, that’s the great part. Just pad into a quiet kitchen in slippered feet, gather the ingredients into your largest crockery bowl, give them a good stir, then fill a cookie sheet with the sweet, nutty mounds, and chill.

No-Bake Power Bites adapted from this recipe
2 cups rolled oats (I use quick-cook oats because they’ve been chopped to a finer texture)
1 1/3 cup coconut flakes
1/2 cup raw sunflower seeds
1/2 cup flax seed
1 cup almond meal
1 1/2 cup unsweetened peanut butter
2/3 cup honey
1/4 teaspoon salt
1 teaspoon vanilla extract
In a medium saucepan, combine peanut butter, honey and salt. Heat over low until melted and combined, stirring occasionally. Meanwhile, in a large bowl, combine oats, coconut flakes, sunflower seeds, flax seed, and almond meal. When peanut butter mixture is warmed through and combined, remove from heat and stir in vanilla. Pour peanut butter mixture over oat mixture and stir until well mixed. Scoop mixture into mounds the size of a walnut using a small ice cream scoop. Place mounds on a cookie sheet and chill for approximately 20-30 minutes. Store the power bites in an airtight container in the refrigerator.
Yield: 2-3 dozen.
