Goodness knows we've been needing these lately, these and those Chocolate Oatmeal Summertimes that I totally messed up the other night, which was such a bummer - until we tasted the messed-up cookies and found that they were way, WAY better than the originals ever were. In fact, they were so good that I made another batch and tried to mess them up, too. I did, even more...but not so much for the better.
It seems that I don't make the same mistake twice, I make double the mistake. Oy. All I can say is that it involved butter and math, two things which, apparently, I cannot handle simultaneously on a weekday evening. Twice the butter, half the math, you can imagine.
Let's talk about the ham & Swiss. Ham & Swiss Roulades (click link for recipe). A savory roll with mellow melted Swiss that has oozed out and turned a crunchy brown in the hot oven; with ham that's crisp around the top edges; with the deep flavor of herb & garlic swirled throughout, it puts the idea of a sandwich to shame.
When the spring track schedule gets a bit jammed, and there are more boys running more ways than you can comfortably count (again, math), and (of course) they need food while they're going all those ways, at least there are the roulades. They help keep things simple. Whew.
A hefty double batch (this time with fresh spinach - great idea, Maureen!) has already fed a few boys on more than one day in the past week, and there's still a stash in the freezer for when we need more.
Yes. Even the food can be less, yet so much more.
